The three faces of pepper
~ in this article ~
1. A story of three colors
Pepper is not three different vegetables. It is the same plant at different stages of ripeness. Green is the youngest, bitter. Yellow is sweet. Red is the oldest — the sweetest, the deepest.
2. Why red became our favorite
Because it knows the most. As it ripens, the pepper accumulates sugar and vitamin C. Red pepper is therefore sweeter, and holds its shape better over fire. Once you get used to it, you cannot go back to green.
~ a small insight ~
Ripe red pepper contains twice as much vitamin C as green. The same plant — just more patient.
3. Pepper and fire
We always roast pepper over open flame until the skin blisters. Then we put it under a paper towel, let it cool, and the skin comes off almost by itself. This is one of the oldest habits of the cellar.
- Whole pepper over the flame
- Turn until every side is blackened
- Under a paper towel for 10 minutes
- Peel, oil, garlic, salt
